Got it! We are a small distillery making single malt whisky in the Isle of Man. All our barley is grown on the Island and it is floor malted in our distillery. Our copper alembic stills are direct fired and use worm tub condensers. Fermentations take 6+ days and are done with 3+ yeasts including wild strains for local flavours.
